Ingredients:
1 cup quinoa, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1 medium red bell pepper, chopped
1 medium cucumber, seeded and chopped
1 small red onion, chopped
1/2 cup fresh parsley, chopped
1/4 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon honey
1 teaspoon ground cumin
Salt and pepper, to taste
Directions:
In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes or until the water is absorbed and the quinoa is cooked. Remove from heat, cover, and let the quinoa rest for 5 minutes, to give it time to fluff up.
