Lemon Blueberry Smoothie
Yield: 1 quart Ingredients:
1 cup cashew milk 3 large leaves romaine 1 tsp. chia seeds (soaked for at least 15 minutes in about 3 TB. water) Small handful of fresh parsley 1 TB. cashews ¼ tsp. lemon zest Juice from ½ of a medium lemon 1 cup frozen blueberries
Instructions: In a high-speed blender blend cashew milk, romaine leaves, chia seeds, parsley, cashews, lemon zest, and lemon juice until creamy. Add frozen blueberries and blend until thick and smooth.
